Summary: Little book - lots of info (2nd Edition)
Comment: There is no discussion on the principles of substitution, but this book provides an amazing amount of raw data on what ingredients or recipes may be substituted for others. I found it very helpful. But I think it's one of those books that could be better if Ms. Epstein and Ms. Klein had done more research. But I would say it's worth the [money].
